Chicken Yam Basket
Ingredients For Yam Basket (A)
900 gm yam
120 gm tang fun
100 gm rice flour
Ingredients For Filling (B)
100 gm chicken meat – cut into cubes
80 gm green peas
4 button mushrooms – slice
4 baby corn shoots – cut into cubes
2 cloves garlic – crushed
100 gm cashew nuts – fried
a small quantity of rice noodles – deep-fried in oil
Ingredients For Sauce (c)
1 tablespoon curry powder
a little pepper powder,sugar and salt
1 tablespoon light soya sauce
1/2 teaspoon chicken stock granules
Method
1. Peel yam skin and cut into a small pieces.Boil until 20 minutes until soft.Mash the yam and form into a dough.
2. Add 4 tablespoons hot water into tang fun flour and mix with the yam dough until even.Then add rice flour so that the does not get sticky.
3. Shape the dough into a basket of medium size.Deep fry in oil until golden brown.Drain.
4. For filling,fry garlic and add in ingredients (B).Then add in ingredients (c).Cook until it forms a thick mixture.Placed the cooked filling in the yam basket.
